ASSYRTIKO
The grape variety chosen for the implementation of the research is Assyrtiko. This is a variety that gives high quality wines with great aging potential.
The place to be planted plays a very important role in the result, while the wines always have a high alcohol content and strong acidity. Assyrtiko is a variety with thick-skinned pods, showing great resistance to dry-thermal environments and vine diseases, such as powdery mildew, downy mildew, and botrytis (rot).
These characteristics make the wines from Assyrtiko very special with their main strong characteristics being the strong structure, density, and volume in the mouth, while their aromatic character is less intense, which is often distinguished by mineral notes. The good structure allows them to have a long aging and development.
